APPLE WALNUT CAKE
4 CUPS PEELED AND CHOPPED APPLES
(8 SMALL, 6 MEDIUM, 4 LARGE APPLES)
1-3/4 CUPS SUGAR
2 EGGS
1/2 CUP OIL
2 TSP. VANILLA EXTRACT
2 CUPS SIFTED FLOUR
2 TSP. BAKING SODA
1 TSP. SALT
1 TSP. CINNAMON
PREHEAT OVEN TO 350 FAH.
COMBINE APPLES, SUGAR AND CINNAMON, SET ASIDE.
COMBINE DRY INGREDIENTS.
IN A LARGE BOWL, BEAT EGGS, VANILLA AND OIL. ADD DRY INGREDIENTS AND APPLE MIXTURE.
POUR IN TO A GREASED AND FLOURED 9 BY 13 BY 2 INCH CAKE PAN.
BAKE FOR 45 MINUTES. COOL IN PAN. SERVE WITH OR WITHOUT FROSTING.
CREAM CHEESE FROSTING WITH A TSP. OF CINNAMON MAKES A NICE TOPPING.
